That is just the default “3D mode”. You can change to “2D mode” to show 16-bit on top and Map on bottom by talking to a priest in chapels, shown by the gameplay videos

Areas do keep unlocking as you progress through the main story, and even more areas can only be unlocked by coop-events and alike. I’m 65 hours in (“chapter” 4 per se) and shit I think I haven’t even unlocked 70% of locations yet
You get a bit less exp in P5 compare to P4G, and the enemy are a bit heavy hitting this time, but no it’s not grinding heavy.
