You don’t build up your guy with levels as such. You get stronger through equipment upgrades as well as items that raise your max HP when eaten but the only actual “levelling up” is raising your settlement’s level by adding new and better buildings.

There are shader mods for Minecraft that add that level of graphical polish, but they also take a pretty big toll on performance. It makes sense since Minecraft has a lot more going on in it than DQ Builders.
