Actually, I bet it helps if you're fishing for bonefish in the flats(translation: gently wading around in shallow parts of a bay casting to fish that you can see). They're extraordinarily jumpy, so any stealthiness helps. The sun is generally quite strong in those situations, hence the long sleeves.
