Actually it’s the dummy head, and has little to nothing to do with the shape of the ears on the dummy head. It’s the solid mass between the two mics that matters.

A binaural recording uses a dummy head with mics located in the ears of the dummy head. The Neumann KU 100 is perhaps the most common in use. BTW, it costs $8000 for that
