I made a thai inspired braised that used the stems.  I didn’t notice any issues eating them.  They just need time to break down.  If they really bother you, you could probably make a bundle of whole stems so you can fish them out after while still getting the flavor.

I work out in a gym, as opposed to home, and find I do weights first because there tends to be more of a battle for those, so I’d rather get them when I can and not count on what I need being available when I’m done. Cross contamination, if minuscule enough, can get through. Just as food labels can say 0g trans fats when there’s less than .5g, so can things proclaim themselves GF when they have limited amounts- amounts that may not bother someone with allergies, but would definitely bother those with celiac.

One doesn’t preclude the other.
