I found roasting frozen chicken breasts, while it take more time, results in a yummy, juicy bird. I think it’s 375 for roughly 45-60 minutes (depending on the size)- flip halfway through. I top it with some oil and seasoning and it’s great and pretty mindless.

I keep both on hand because table salt is great for the reasons you highlighted- it’s what I throw in boiling water, but its tiny grains make it tricky to sprinkle. It always get under my nails and sticks to my skin. Kosher salt is course enough I can sprinkle it on meat and know I’m getting a relatively even coating.
