For number three - If a child dies, can the parents consent on behalf of the child to donate the child’s organs? If a child dies and their parents want to donate their child’s body for medical research, is that legal? These are honest questions. I did some brief Googling and couldn’t tell how it works.

Not sure where your assertion that Christians don't cremate due to their resurrection beliefs comes from, but it's definitely not across-the-board true. Many Christians choose to cremate and believe that an omnipotent God won't have any trouble providing bodies when the time comes.
