If you're referring to Reek's torture, I can understand why they showed that. In the books, you're able to go into Reek's mind, seeing first hand how shattered he is. He's barely even human anymore, fearing to even think his own name.

Well, Arya's kill count is quite a bit higher in the books… what with the attack on the night's watch that they cut out and she did freak out and repeatedly stab the tickler. If anything they've toned down Arya… I mean, she's fixing to be trained as an assassin.

I think you need to remember, that while GRRM does use unreliable narrator a lot, the unreliability of the narrator comes in their telling of what happened. If you're seeing something from a character's POV, it isn't the words that are unreliable.
