I think that was GRRM's take on colonial and counterinsurgency wars. The Unsullied are great for battlefields where the enemy is easily identified and is using similar tactics. The show's story is almost complete. Although the author of the books upon which the show is based has not completed the written story he has shared most of his planned ending with the show's creators. And after seven years of doing the show the creators and probably the actors as well are eager to complete it.
It's like The War of The Roses, but with a bit more fantastical elements. But the fantasy elements really aren't that important until later. The first four seasons are really good.
