I’d say Digimon Adventure 01 and Digimon Tamers would be up at the top for me, followed by the non-filler seasons of Yu-Gi-Oh.

But Pokemon was always to me mostly about Ash trying to “catch’em all” which had that vague open-endedness that was never at the forefront of the show.
