I’ve tried some fish at lower temps like 122, and I’m not a fan. It can have a slightly raw look and feel to it. Even through it is fully cooked, it can be unnerving. It would be fine with a nice heavy sear, but sometimes I like to sousvide fish then chill it immediately to have on a salad.

I’m down for some sous-vide lobster rolls.

Chefsteps tested this and their taste testers could not tell the difference when cooking from frozen vs fresh. The general rule of thumb was to just increase the standard cooking time by 1.5x

I leave the ends long and wrap tie them with ribbon to it looks like a tootsie roll.

Yes, exactly. The Yongnuo 50mm f/1.8 is a steal at only $50. Then you can even use this method with a prime lens and get the effect of having a full frame or medium format camera.

That’s worth the money, but I’d still recommend a prime lens to someone first over software.

I’ve seen this method used more for shooting landscapes. I saw a guy make an awesome rig for shifting his camera around during panoramas, all while keeping the image sensor on the same plane, it was impressive.

You can also steal nicer lenses, but I wouldn’t recommended it. Gimp is a good option.
