Oh, I re-read your first post, and I see what you're saying now. Yeah that should work as long as it isn't a wide angle lens that will cause distortion. Only downside I can think of is losing some image quality cropping everything down, but totally worth the savings.

7D shoots better video quality video due to the dual image processors, and you also get weather sealing. However, I use a 550D and I have no complaints on quality at all.
