Personally I always liked medium rare.. steak on the rare side. More recently I find thoroughly cooked meat tastier. It is not as juicy but I like the more condensed flavor I get.. Like a steaky concentrate, love nice and crispy meat on the outside. I will never go back to a rare steak.. love them crispy much better.
