Agreed - my mom used to make wedding cakes for people when I was a kid. She’d bake up all the rounds ahead of time before doing all the decorating the day before.  You have to trim the cakes to level them out generally - and those frozen/semi-frozen cake trimmings are some of the happiest memories of my childhood.
