How does this guy not mention the synchros? That’s by far the biggest problem with skipping gears when downshifting. You can rev match all you want, but if you’re dropping 6th to 3rd, you’re gonna have a hell of a time trying to mash that stick in gear while the cones on the synchros are trying to get your layshaft up

Right. But double-clutching when downshifting is not about giving the synchros time to adjust; it’s about using the engine/clutch to bring the layshaft up to the necessary (much higher) speed it must be at in the lower gear, rather than making the synchros do the work.
