I don’t use a pastry cutter anymore since I got my glorious food processor of awesome. It has a pastry blade made of plastic so the metal doesn’t get the dough too warm. It is my hero. I would write odes to it if I were a 16th century poet.

I generally use Martha’s pate brisee recipe, because it’s easy, and I like that it has so few ingredients. I’ve made a few with shortening before, but I prefer the pure butter taste. I’ve perfected it to the point where I made 8 double crusts in 15 minutes this year. I don’t know what that says about my sanity.
You could probably omit them and just increase the amount of the other berries without issue.

The crust is the hardest part by far - my general tips are to put all the ingredients in the freezer beforehand, and to touch it with your hands as little as humanly possible.
