Pectin is a gelling agent extracted from plants (the stuff that makes the cell walls of plants). And pepsin is used in cheese making. I’m not sure if it helps with making cheese’s more smooth but it could be.

I don’t think it’s peptin (the stuff in fruit?) but I would like to know what it is!
