If you’re making stock already, just toss some raw skin and trimmed fat in the pot as well. Once your stock is cooled, the fat comes to the top.

I do this with homemade stock. Get an 8qt pressure cooker. Toss your stock base in (like a gallon ziptop bag), fill up to fill line, get it up to 15psim wait an hour, kill the heat, wait for natural depressurization, cool rapidly. No powder can beat from scratch.
