It’s definitely a “because it’s made with tenderloin” situation. That seems to be because as a popular mid century restaurant dish it was presented that way.

It is traditionally made with tenderloin. But you cube or strip up a tenderloin then cook it in a sauce it isn’t exactly steak.
Your roast beef sandwich at a restaurant is usually top round. Which is a tougher cut, tends to be leather past medium.
It might have to do with how they structured the questions. People are REALLY bad at estimating the size of portions and and amounts they eat overall. If those numbers were self reportes they’re probably low.

They’re targeted at minority communities and/in economically depressed areas. That, college students, and women have been the areas where FMBs had their sales base. But the high ABV versions are narrowly focused minority budget market.
I doubt there’s much in the way of congeners in there. The sugar base used doesn’t produce a ton to begin with. Very, very specialized turbo yeasts are use. And the results are filtered to an insane level.
