I’ve always whipped egg whites in glass bowls. When I was taught how to do it, I was told that you have to wash the bowl right before using and dry thoroughly. That way you can be sure there is no oil residue anywhere. I don’t doubt that copper or stainless work as well, I was just taught to use glass.
