If you really have your heart set on a particular hotel, consider calling them. Chances are they have a handful of rooms that they don’t sell through third party services. My hotel keeps two of each kind of room in reserve just to avoid oversold situations.

I used to be very anti-VTT. But, after a few months of 5e play on Fantasy Grounds, I can say that I’m having the most fun I’ve had as a GM in over a decade, and FG has quite a bit to do with that.
