That's where the extra sticks stay, you're its much easier to measure. The sticks come with measurements on them so you can cut a cold chunk off

Trust me it won't go rancid in 2-3 weeks. That's about what my household does and we've never had a problem.

Ours if salted on the counter in a butter dish with lid. Never had a problem.

We have butter on the counter for over a month sometimes and it's fine. It's pasturized from the grocery store.

I guess I forgot how much of a shit hole New York is. Could a big cockroach lift the lid off a butter dish? Maybe a big rat? Put something heavy on the lid or something.
