Do you know their future spouse well? Could they have issues with alcoholism, or have alcoholics in the family? I would hold off on the judgement, personally, unless they’re just doing it to be cheap (which for a 20 person destination-ish wedding is not much of an excuse).

I have no plan on making my wife lose her last name, never have. But all else being equal, I would prefer to just give the kid her last name and be done with it. That’s my preference.

Hyphenate and don’t stress. I PROMISE you, it is not as complicated as it seems.
