I think what you're referring to dining wise is more of a Nouvelle Cuisine, bistro genre. French as I know it from having lived in France, is not light food for the peckish.

Perhaps those servers aren't well informed/educated enough to know the difference between legumes and tree nuts, but that isn't really your problem or your husband's, that's their ignorance flag flying high. I generally don't go back if they make multiple egregious errors, like overcooking something (if I wanted English cuisine I would have gone to Yorkshire for something boiled to misery) incredibly simple or the absent server syndrome.
