Again, you seem to be confusing one restaurant and a certain genre with an entire cuisine. All those sauces you learn about that are cream and butter based, they're sure as shit not American ones.
I think what you're referring to dining wise is more of a Nouvelle Cuisine, bistro genre. French as I know it from having lived in France, is not light food for the peckish.

Perhaps those servers aren't well informed/educated enough to know the difference between legumes and tree nuts, but that isn't really your problem or your husband's, that's their ignorance flag flying high. Ignore them and explain no nuts that grow on trees and list a few examples but peanuts are A-OK.
I generally don't go back if they make multiple egregious errors, like overcooking something (if I wanted English cuisine I would have gone to Yorkshire for something boiled to misery) incredibly simple or the absent server syndrome.
