An aeropress brew the coffee under pressure. It’s basically a manual espresso machine. Since its brewed quickly under pressure the grind and time of pushing the water through the grounds (and even water temp) becomes much more noticeable. Whether it comes out bitter or sour or just right is a matter of experimentation…
