I'd assume not. Take mice and hares. Via Wikipedia, mice average about 3 to 4 inches, and hares 19-30. Thus, a realistic hare could be up to ten times the size of a mouse, and that doesn't sound like Redwall.

That twist was possibly my favorite joke of the finale. A joke is something that messes with expectations, so it's hard to make one more satisfying than a candid subversion of a 7-season long running gag.
