PCIe v4 x16 speed is about 30 GB/s, and Thunderbolt 3 is at 40 GB/s, so technically it’s got better transfer speeds than if you had the card plugged directly into the machine with the absolute best hardware.

Because it’s a genre. You don’t yell at Call of Duty for stealing Unreal Tournaments camera and shooting mechanics, or say that Crono Trigger is just a rip off of Final Fantasy since the fight system uses menus. In the same vain, you shouldn’t dock sandbox crafting games as just being “a rip off of minecraft.”
