You should try fermented tofu too. It goes great added to sauces just like fish sauce. Totally different type of umami. 

Minus the sugar and vinegar and shredded carrot and garlic and water, this is all you need to add to any protein, even sliced fried eggs, to get the same sauce as larb or “insert protein” SE Asian salad.
