What are you talking about? The cheese/lettuce patterns are completely different in each taco, even ignoring that the tomato/sour cream placement is different as well.
It's common knowledge that Lucas' original concepts were terrible and his dialogue even worse. It was only his friends, the writers and the cast that made it as good as it was.
Not sure if I've fully watched/listened to said episode, but considering I'm involved in the interviews for the film's new Blu-Ray bonus content I thin I'm covered as far as how the production went down. ;)
I hate to say it, but Nintendo had very little interest or investment in the project. They sold the rights to an indie company just to see what they would do with it.

It should be pointed out that the film's creators didn't have a lot to work with. While there was certainly official artwork for the Goombas there was none that actually featured them alongside Mario.
