I don't see a problem with 50fps, since most games these games still run at 30. Unless you're talking about 25fps for pre-recorded video, which is a different thing. In my extensive and continuing experience there is no appreciable difference between 25 and 29.97.

S-video is much better than composite but still not quite as good as component. People get mixed up because the names are so similar. Component is the good one.

Short answer, move to Europe. We've had RGB as a major video standard since the 16 bit days. As long as you owned a Sega system that is; Sony didn't add RGB until the PS2 and Nintendo didn't really get around to it until the Wii! Technically the GameCube had RGB out but you needed the super expensive component cable

N64 Rainbow Road is the worst Rainbow Road ever; which for me is a funny thing to say as Mario Kart 64 is my favourite Mario Kart. It's far too easy to deserve the name Rainbow Road. The track is too wide and most of it has side barriers to stop you falling off.

Don't forget to strap on that Sonic & Knuckles cart. It'll let you play as knuckles so you can get those hard to reach items.
