heating milk long enough and hot enough to make it perfectly safe to eat IS CALLED PASTUERIZATION!!!!!!! also, you typically don’t heat high or long enough during cheese making to properly ensure safety(at 120 degrees you’d have to heat for like 3 hours). with certain cheeses you don’t heat at all.
