This is actually a feature on modern ABS systems. It is called off-road ABS and its smart enough to know when to engage this mode ;)

Seriously ! Someone who drives in the snow states will know very well the true value of it. In addition to what you said, even a regular stop for a intersection will be impossible when there is ice on it. Forget making a lane change on ice/snow without ABS
Forza is pretty okay for simcade but if you really want to see the beauty of sims then you gotta try Assetto Corsa or GTR2 or iracing or even Rfactor
Heck GTR2 for its data acquisation used MOTEC which is one of the tools the race teams use to see their data.

Nascar cars are not set up to track straight well atleast suspension geometry wise! Their suspension is not symmetrical for oval track races
