Princes Mononoke or Earthsea. Those are my favorites. Naussica of the valley of the wind is great, though it’s technically pre-Ghibli. Howls moving Castle and Spirited Away are class acts as well.
Neverwinter Nights (the old Crpg not the mmo) or Sword Coast Legends are the closest we have gotten so far to this. I prefer NWN over SCL but I also played NWN more
