It’s not that people buy too much at once, it’s that self-check takes more time per item than the regular checkout line. Cashiers are pretty efficient. I eat meat, but I do go for the vegan option in certain situations. If I go to a shawarma place, I get falafel instead of meat most of the time, and I use tofu at home instead of meat a lot, especially in stir-frys.
