Good point. I’ve done pork chops as you describe in a cast iron skillet with onions, and that turned out great.
Maybe I should look towards an apple based injection or BBQ sauce. I’m lucky that we have a great BBQ place down the road that does a great apple BBQ sauce, but I’m trying to learn my own too.
