I think you've successfully answered your own question here. Most guys are rational and understand this. Most of the guys who do get it behave accordingly. I did! Anyway, I found out what happened. I must not have gotten all the grains of sugar off the sides of the saucepan. My pastry brush is crap, so I'll get a new one. Touching even one undissolved grain of sugar re-crystallizes the whole recipe, apparently.
