Agreed. The object is to sear the bird to prevent oil absorption. The oil then cooks the from all sides, trapping the moisture and added brine in the muscle, keeping the bird moist. This is why frying a turkey is a great medium. You will gain less than 2-3% oil pickup in a turkey if done properly.

Another thing besides a fire extinguisher, is a large metal pan that you can use to cover the oil pot. You can use the pan to cover the oil pot in order to smother the flame through oxygen depletion.
