That’s because the beer is probably fresher. Packaged beer will inevitably pick up some oxidation during it’s process which ages the beer incredibly quick and alters the flavor. Beers always tend taste better at the brewery because of this.
Isinglass doesn’t contribute to any flavor at all. It’s simply a tool used to flocculate the yeast. The recipe isn’t changing one bit. Just one part of the process.

Couldn’t we just temporarily shut off a bunch of important shit before it hits? If, apparently, we get at least a few hours notice.
