With restaurant failure rates as high as they are, plain old random chance could cause a streak of quick closures. (It’s the same as if you flipped a coin 10 times — even when the odds are 50/50, sometimes you get 10 tails in a row.)
You can; I did this just yesterday with leftover chicken chili verde. It’s maybe not quick quick, since you have to bring the chili up to temp, then give the eggs about 10 min to simmer, but it worked like a charm.
Pretty sure it’s green pepper & mozzarella. (or is meant to be — food stylists are tricksy beasts).
