Vinyl would be PVC, there are alternatives such as polyurethane which is a better choice than PVC - more flexible, breathable and softer with less environmental impact and the reason many (most?) man-made upholstery and clothing/shoes use it now.

Yes, because the leather production process - cleaning, tanning dyeing - is so toxic, it would be better for our ecosystem to let the hides decompose naturally.

Why make or offer any options then? Because there is a market and preference for those things. Pretty simple. In this case, it may (or may not) be an ‘ethical’ decision.

Petroleum products are used in the leather tanning/production as well, along with many other harmful and toxic chemicals. Leather production isn’t good for anyone - it’s bad for the animals, people and environment.

How about all the hazardous and toxic chemical waste of ‘leather production’ since it is not exactly just a harmless byproduct of (also not harmless) meat production?
