I’m sorry, but what you said isn’t entirely correct. HIV mutates fairly quickly, but the sort of change you’re thinking of is massive and vanishingly unlikely to happen due to the specific biology of HIV infection.

HIV isn’t going to mutate into a different kind of disease. It’s too fragile to be anything but bloodborne/sexually transmitted, and the amount of mutation it would take is only something you could do with a crapload of genetic engineering if it’s possible at all.
