Mixed results. It does thicken, much like cream, as Heston said in his video. But it doesn't really fluff up like cream does. I once found a copy of the Fat Duck Cookbook in a charity shop. It was only £20 for a book that's normally about £150. I ummed and ahhed for ages, but in the end I left it - I couldn't justify buying a cookbook knowing full well that I'd never cook a damn thing in it!

Since we're being self-indulgent, I'd like to recommend a few more:

I can't speak for the first white guy, but David Thompson's credentials are legit - he lived in Thailand for years, speaks fluent Thai, and learned his trade there. He didn't just learn recipes from other white people.

Not to be a dick, but In Search of Perfection is a very odd choice. I've never been clear who it's aimed at. Its basic point is taking fairly simple dishes and making them inaccessible. I've always figured it as a cookbook for the coffee table, not for the kitchen.
