Only, it turns out that a number of places have street hawkers to get you to go in and my Geek HATES BEING HARANGUED IN PUBLIC.

If you find Buddhist Chinese restaurants - that stuff is truly vegetarian. Also, Gung Tak Lam (a Shanghainese chain) makes seriously delicious veggie food. It's also in HK and Los Angeles.

This one is really well done. I can't find fault with it.

When I went to India, my travelling partner was vegetarian, so in order to be fair (so we could sample as many different flavors as possible when eating) I went vegetarian for the three weeks. (Well, except the one mutton dish, because there ain't nothing like mutton). It was fantastic. Didn't miss meat one bit.

I grew up in the 80s, my history classes never got to World War II. We should be fine.
