I think the 'last minute' arrival of the Vale Knights was on purpose. They needed Ramsay to fully commit his infantry with their backs to any flanking reinforcements, if they had arrived earlier, Ramsay just would have retreated into Winterfell with most of his army (not with what was left).

While TV's gotten much better with the details (sets, equipment, vehicles, uniforms etc.), economic realities of a character's job/profession is certainly something that the much-vaunted Golden Age of television has really dropped the ball on.
