The FDA has labeling requirements about the top 8 allergens (which includes peanuts); allergens IN products have to be bolded and any even theoretical exposure has to be listed - companies can handle it differently but at a minimum there’s a “may contain” statement.

For drinks, I tend to add a buck or so a drink. Especially beer, which doesn’t demand any mixology or real “making”. I might tip a bit more on a great crafted cocktail. But 20% would only be for exceptional service of some sort. This clearly was not that.
