I have Sonic All Star Transformed and it isn’t bad, but especially on split screen, the draw distance and the camera angle make it just frustrating, it’s really hard to see where the next turn is or where stuff is.

Yeah, if I’m taking a trailer farther than like 50 feet from the ramp to a parking space I’m triple checking all my safety chains and lights and stuff. Yep, my first guess when I saw the pictures + trailer was they got slammed by a sudden crosswind from the gorge, overcompensated and flipped it off the other side. It’s probably considerably windier there than the surrounding area, plus weird as you say.
