Counterpoint-that’s only true if you’re cooking good steaks. The real advantage of sous vide (IMHO) is that you can throw in a cheap cut, cook it 14/18 hours and have it come out incredibly tender.
I share your pain. My mom used to over cook everything. She’d broil eye round steaks to the point the ends would curl up. We had serrated steak knives and you would end up sawing, not cutting, leaving behind the meat equivalent of saw dust.
If you want an inexpensive alternative to commercial sous vide machines (and even cheaper than building it yourself in most cases), buy an “immersion circulator” off of ebay. It’s the exact same thing except it’s more precise and more durable. I paid $85 for mine and it works great.
