I think there's been speculation that Marceline's mother was human - there's what looks like a family portrait in the background in "Return to the Nightosphere" - and her saying she's half-demon confirms it.

I'm guessing she was never made a vampire in the FW timeline, so she aged very slowly as a half-demon. She always has fangs, even in the "I Remember You" flashback, so I'd guess that's from the half-demon bit, not the vampire.
