You should be able to right-click on the Speaker icon in the taskbar, click on Playback devices, and right-click to Set as Default the HDMI output.
Win+P also works in just about every version of Windows.
There are also one-way HDMI cables in existence. Normally they have a powered transmitter in one end that pulls voltage from an HDMI output so it will only send the video signals one-way but passes the two-way handshaking signals.
