I think D+D liked the idea of Jaime being a man who was too damaged by the past to have a meaningful future. But yeah, it was meaningless nonsense string-pulling just to get to the ending, because I have no idea what his plan would have been if he hadn’t been wounded.

Personally, I think selective watching is a perfectly reasonable strategy. If I were you I’d watch all of season one, read recaps of all but the final season and watch snippets of what interests you from the recaps, watch the final two or three of the penultimate season, and watch the final season.
